These delicious PB&J inspired cereal bars make for a perfect on-the-go treat. Melt smooth peanut butter with some marshmallows and a touch of brown rice or maple syrup, which allows you to reduce the amount of marshmallows typically called for in a cereal bar recipe. Add crushed Driscoll's Blueberries to the mixture for a pretty purple swirl, then fold in more whole berries for a juicy bite!

Ingredients
1 Cup smooth peanut butter
10 marshmallows (vegetarian if desired)
1/4 Cup brown rice syrup or maple syrup
1 Tsp. vanilla extract
1/8 Tsp. kosher salt
1 Package 1 (pint) Driscoll's Blueberries, divided
6 Cups favorite cereal

LINE a 9-inch by 13-inch baking dish with parchment paper and SPRAY lightly with cooking spray.

PLACE 1 cup smooth peanut butter into a non-stick skillet or saucepan.

ADD 10 marshmallows (vegetarian if desired).

ADD 1/4 cup brown rice syrup or maple syrup.

ADD 1 teaspoon vanilla extract.

ADD 1/8 teaspoon kosher salt.

COOK over medium and STIR frequently until marshmallows are melted and mixture is smooth, 10 – 15 minutes.

SET ASIDE peanut butter mixture.

PLACE half of 1 package (1 pint) of blueberries into a medium bowl.

MASH blueberries with a fork or potato masher until crushed.

ADD peanut butter mixture.

SPREAD mixture in an even layer in prepared baking dish and PRESS DOWN with the back of a spatula.
