Description
A stunningly simple dessert made with fresh seasonal berries, homemade pound cake, and tangy Greek yogurt! This easy raspberry parfait is the definition of summer. It's simple to make, has only a few ingredients and it is perfect for any occasion!
- 1 Package (6 ounce) Driscoll’s Raspberries
- 1 Tbsp. plus 2 teaspoons honey, divided
- 2 Teaspoons fresh lime juice
- 1 Cup plain Greek yogurt
- 1 Cup purchased lemon pound cake, cubed
- Fresh mint leaves (optional)

PLACE 1 package raspberries into a medium bowl.

ADD 1 tablespoon honey and 2 teaspoons lime juice.

STIR gently to coat raspberries.

ALLOW raspberry mixture to rest 15 minutes or until syrup develops.

DIVIDE 1 cup yogurt between four small jars.

DRIZZLE each parfait with 1/2 teaspoon of remaining honey.

DIVIDE 1 cup cubed pound cake between jars.

TOP each parfait with a heaping portion of raspberries.

GARNISH with mint if desired.

SERVE Simple Raspberry Parfait immediately.
