Overnight Oats
- 1/2 Cup rolled oats
- 1/2 Cup milk
- 1/4 Cup coconut yogurt
- 1/4 Tsp. vanilla extract
- 1 Tbsp. maple syrup
- 1/3 Cup chopped Driscoll’s Strawberries
- 1/3 Cup Driscoll’s Blueberries
- 1 Tbsp. chia seeds
- Granola for garnish
Strawberry Chia Seed Jam
- Half of 1 package (16 ounces) Driscoll’s Strawberries, hulled and sliced
- 2 Tablespoons maple syrup
- 2 Tablespoons chia seeds
Overnight Oats

PLACE 1/2 cup oats into a 12-ounce mason jar.

ADD 1/2 cup milk, 1/4 cup coconut yogurt, 1/4 teaspoon vanilla extract, 1 tablespoon maple syrup, 1/3 cup chopped strawberries, 1/3 cup blueberries, and 1 tablespoon chia seeds.

MIX well and ENSURE oats are completely covered.

REFRIGERATE at least 4 hours or overnight.
Strawberry Chia Seed Jam

PLACE half of package of strawberries into a medium saucepan.

COVER saucepan with lid and COOK over high heat 2-3 minutes or until strawberries begin to break down.

REMOVE lid.

ADD 2 tablespoons maple syrup and 2 tablespoons chia seeds.

ALLOW mixture to come to a boil.

REDUCE heat to medium-high.

MASH strawberries using a potato masher or immersion blender.

REDUCE heat to medium and SIMMER for an additional about 5-8 minutes while STIRRING occasionally.

ALLOW mixture to cool somewhat.

TRANSFER mixture carefully to a mason jar.

COVER jar with lid and REFRIGERATE overnight or until set.

SERVE overnight oats garnished with strawberry chia seed jam, sliced strawberries, and your favorite granola.
